1/4 cup Pineapple Juice
1 2″ -piece of thinly sliced ginger $0.24
1/4 cup sugar $0.05
2 cups pineapple juice $0.80
1 liter sparkling water $0.33

4 ounces spiced rum (optional) $1.60
Directions: In a small saucepan over medium heat, stir together the reserved juice from can of crushed pineapple, with 1/4 cup sugar and ginger slices. Bring to a simmer to dissolve sugar, remove from heat and allow to cool to room temperature.
In a large pitcher stir together the pineapple ginger simple syrup with 2 cans of pineapple juice and rum (optional). Pour into ice-filled glasses and top off each with sparkling water. Garnish each with two pineapple chunks on a toothpick.
